Can you add a statcounter to a form? Invisible so that hits to the form a logged, not just entries in the form?

Yes, the easiest option is by using the section break field. Simply add section break field into your form and put your statcounter code there.
You can then hide your section break completely by modifying the CSS code.
Other option is by modifying your "includes/view-functions.php".
Search for "Powered by MachForm" text and put your statcounter code somewhere above that line.MachForm Founder

You can edit the "includes/view-functions.php" file. Search around line 5239 and you'll find the HEAD tag.
You can insert your code below that tag.MachForm Founder
