Do I need mySQL?

If I want people to fill in a form and then simply have the form data emailed to me, do I need a mySQL database?

Yes, MySQL is still needed to keep all your forms information.

But I don't necessarily want to keep it in a database, I just want it emailed to me.

It still needed because all the forms are actually being stored within MySQL database. MachForm doesn't generate standalone PHP file for each of your form.
All forms are being generated on the fly, from the database.

Hmmm.. then that is probably the end of me. I know nothing about mySQL (or yourSQL or anybody else'sSQL for that matter)

All you need to know is so easy that you should spend some time to learn.
You only need to create a database and a database user and that's it, the machform script will do all the rest when it comes to working with a database.

who is your web hosting?
maybe we can look at the FAQ's there and help walk you through the creation of an empty MySQL database. Most web hostings make it pretty easy and it simple once you find it.
